Our wines are mainly produced from the Hollowmere vineyard in Bracken Hollow. However, due to increasing demand, we are excited to be sourcing fruit and making some select batches of wine from great quality vineyards from other parts of New South Wales. The wine from these different vineyards will fall under our Vineyard Selection range.
Whether from Mudgee or further afield, our philosophy of care and attention to quality of viticulture, winemaking, and our wine remains the same.

Our popular, classic Chardonnay that even people who don't drink Chardonnay, love. Bright, fresh and aromatic. A combination of fermentation in stainless steel to highlight the pureness of the fruit, and barrel fermentation to bring structure and backbone. This wine is very easy drinking, despite its complexity. The perfect match for seafood or roast chicken.
A stunning golden hue with green reflections, this elegant Chardonnay presents aromas of corella pear, fresh orange zest, and ripe passion fruit. The palate reveals layers of toffee and choux pastry, enriched by balanced tannins and a promising depth. Drink now or cellar for up to 8 years to discover its evolving complexity.

Our 2018 Merlot is the wine Camille points to first. After 7 years in the bottle the wine shows beautiful jammy red berries, portobello mushrooms and smoky cigar. Deep ruby in colour this wine is bold yet well rounded.
Beautiful blended aroma of raspberries, rhubarb and fairy floss. Tastes like freshly pressed pomegranate, perfect for a warm summer's day.
Very Provencal in style and the essential accompaniment to your game of Petanque. Our Sangiovese Rose displays ripe red berry flavours and aromas, with a savoury dry finish. We harvested in the cool of the evening and gently pressed the grapes straight away to retain the fresh bright fruit characteristics. Bright, clean and very fruity, our Rose is the soundtrack to your Spring and Summer.

Latin for Blood of Jupiter, this Italian variety originally from Tuscany and used in the production of Chianti and Chianti Classico, thrives in our vineyard here at Hollowmere in Mudgee. Our Sangiovese is carefully selected from our best blocks and aged in old French oak. A medium-bodied red with aromas and flavours of cherries, ripe berries, earthy spices and bright acidity. Perfect on its own but also pairs well with tomato-based Italian-style dishes.
Translated as Three Waves in Italian and one of our most popular wines, it started out as a mistake, to quote our Winemaker. The Sangiovese grapes originally used presented beautiful aromatic complexity but little colour, tannin or depth. As a result we blended it with Merlot and Shiraz to fill in the missing components. The result was a beautiful balance between the Sangiovese aromatics, the rich firm tannins of the Shiraz and the round finish of the Merlot. And yes, we have made the Mistake again since.
A perfect balance between strength and gentleness. The Cabernet Sauvignon from the Hollowmere vineyard is a very rich wine with strong tannins, deep dark berry characteristics and notes of vanilla, cigar and chocolate from French oak. Add the roundness of the gentle Merlot, with its bright red berries and more delicate tannins, and you get one of the most beautiful and harmonious blends possible. Power, length, and fruit. Perfect with grilled lamb seasoned with rosemary and sea salt.
The Mudgee Classic. In the 1970s Mudgee became well known for full-bodied warm climate red wine blends. Paying homage to this historical legacy, Hollowmere Cabernet Shiraz is power meets strength. Rich, tannic Cabernet Sauvignon melds harmoniously with fruity, spicy Shiraz. A wine to pair with equally robust meals and cool weather. Or an Aussie barbecue with grilled steaks.

We have been looking to extend our range with carefully selected fruit from other regions and our first pick for 2021 has been from the famous Moppity Vineyard in the Hilltops region of Southern New South Wales. The perfect blend. Cabernet is bold and rich with firm tannins. Merlot is present in the wine with beautiful fruit and unctuosity in the tannins.
We have been looking to extend our range with carefully selected fruit from other regions and our first pick for 2021 has been from the famous Moppity Vineyard in the Hilltops region of Southern New South Wales. Our 2021 Hollowmere Vineyard Selection Hilltops Cabernet Sauvignon is strong and rich, full of flavours but has the softness of cool climate fruit.
